Our Head Chef Braden Charlesworth yesterday won Visionary Chef of the Year 2012. This is an amazing achievement for Braden – who joined the team in 2010 and has transformed the menu in The Grill which incorporates locally-sourced, quality food with a twist on the traditional.
Braden won his heat for Visionary Chef 2012 back in January of this year and was paired with his mentor Adam Brown, Head Chef at Brockencote Hall Hotel, for the final which took place last night at Northampton College.
Each mentor-and-chef pairing was given a theme based on nature, from which they had to create their own, unique dish.
Nine of the UK’s most talented and celebrated chefs competed throughout the day, serving their creations which were to be judged by the diners present as well as a select panel of experts.
Braden and Adam were given a dessert based around the theme ‘Ice’. The joint-creation, pictured below, was a tangerine ice parfait with carrot sorbet and carrot curd, and buttermilk granite falling off like snow.

Braden and Adam’s winning creation
Braden: ‘It’s a real honour to win this, the competition runs all year so there’s a lot of build-up and anticipation for the final. Adam and I worked on the dessert together and we wanted to come up with something inventive and perfectly executed – Adam was a great mentor and the experience as a whole has been really inspiring.’
