We breathe a unanimous sigh of relief as spring has finally arrived, with fresh green leaves, pretty pink blossom and even enough sunshine for picnics in the park. The perfect time to create a new menu, Braden has used the best seasonal ingredients in the new menu for The Grill at Flemings.
The a la carte sees fresh spring dishes with full flavours, healthy seasonal produce and lots of character. Here’s our pick of the best dishes for a perfect spring meal:
Starter: English asparagus with wild garlic and a poached free range egg
This Spring dish is simple and light, with blanched asparagus, wilted wild garlic and a poached free range egg. It’s beautifully delicate and an ideal starter.
Main: Grilled rump of lamp with boulangere potatoes, Savoy cabbage and leek
Traditionally associated with Spring, lamb makes for a delicious main course with its delicate flavour and tenderness. This lamb dish is served with boulangere potatoes, a lighter version of Dauphinoise, which has braised shoulder meat throughout the layers. Finished with a saute of spring vegetables.
Dessert: Rhubarb and custard
Rhubarb’s arrival signals the promise of spring and its vibrant pink colour is lovely and cheerful. This dessert has custard set in the bottom of a jar, topped with shortbread crumbs and poached rhubarb.
