Who doesn't like a classic Old-Fashioned cocktail? Here, our Head Bartender Pasquale shares his favourite recipe...with a twist!
You will need:
50 ml peanuts-infused bourbon (see step 1)
7.5 ml honey syrup (see step 2)
1 dash angostura bitters
For the garnish: some peanuts and one orange twist
Method:
Step 1: make the peanut-infused bourbon
Combine one cup of unsalted dry-roasted peanuts with 1 and ½ cup bourbon in a nonreactive container, cover and leave at room temperature for 24 hours.
Strain through a double layer of cheesecloth (you can use a coffee filter also!) into a clean freezer-safe container. Place in the freezer for 24 hours.
Remove the solid fat from the surface of the liquid and discard.
Let the mixture warm to room temperature then strain into a clean bottle.
The bottle will keep for a week.
Step 2: make the honey syrup
Combine one cup clover honey with 1/3 hot water in a bowl and stir to dissolve the honey. Seal and store in the fridge. The honey syrup will keep for a week.
Step 3: the cocktail!
Combine all the ingredients except the orange twist in an Old-Fashioned glass with ice. Stir until chilled.
Twist a large piece of orange zest over the drink and drop into the glass with a few peanuts.
